Christmas is almost here and there is no better way to celebrate that with a traditional Christmas Pav but in a fresh mocktail! Creamy yet light, fresh and fruity its the perfect summer combo!
50ml Seadrift Wild Hibiscus
30ml Vanilla Syrup
5ml Lemon Syrup
30ml Double Cream
Half a Passionfruit
½ large strawberry
2 mini meringues
Icing sugar to dust
A large open dessert glass, or large coupe glass.
- Place the berries and passionfruit into the cocktail shaking tin.
- Muddle the berries together with a muddling stick or the back of a spoon.
- Add Seadrift Wild Hibiscus, Vanilla Syrup, Lemon Juice and Double Cream.
- Add ice and shake.
- Double strain through the strainer and a cocktail sieve
- Garnish with the mini meringues, strawberry and raspberries and a sprinkle of icing sugar.
